How do we adapt to the changing food markets?

The old saying goes, ?The only thing that stays the same is that everything changes.? Nowhere do we see these changes more than in the food market. I am not talking about the grocery store where you buy your food, I am talking about the marketplace for food and the changing landscape of what the consumer wants. It always changes from one generation to the next, and it is seeming to become more confusing, the further removed people get from the farm. So how do we survive?

Mike Lee is co-founder of Alpha Food Labs. He talks about the future of food and where the marketplace seems to be headed.

Lee says that niche markets are taking bigger bites out of the bottom lines of larger food companies. The power seems to be shifting to specialized suppliers.

The digital age is shaping the purchasing of our groceries as well. Lee says producers can survive if they can find that niche market that will stay highly devoted to them, rather than trying to please a broad spectrum of consumers.

Lee says this generation of eaters wants food that intersects at healthy, sustainable, and taste.
